The original recipe was for Chocolate Espresso Snowballs, but I didn't have espresso powder, so instead I just used cocoa powder. I also left out the pecans. I got this idea from Woman's Day Magazine. And let me tell you, it is the best chicken I've ever had! Here are the instructions: 1. In a small bowl combine: 2 tbsp chopped Parsley, 1/2cup chopped sweet green peas, 1/4cup cottage cheese, 1 finely chopped scallion, 1/4 tsp fresh lemon juice, and 1/4 tsp each salt and pepper. 2. Cut a two inch pocket in the thickest part of the chicken breast. Stuff a quarter of pea mixture in each breast. Season chicken with 1/2 tsp salt and pepper. 3. Heat oil in a large skillet over medium-high heat. Cook chicken breasts until golden brown and cooked through, 5-7 minutes per side. I hope you enjoy and try it yourself! It was absolutely delicious! I got this splendid recipe from ifeellikecooking.com and tweaked it a bit. Instead of Penne pasta I used Rotelle, I didn't use coriander powder, and instead of vodka sauce I used regular pasta sauce and added a touch of cream. I hope you try it out! I've made them three times in the last week...
