For the cupcake itself you can use your favorite recipe-- I used some good old box mix, which for the record, is just as yummy as anybody else's recipe. The frosting however, I made from scratch and is fairly simple. I needed very little frosting, so this recipe makes approximately 1 1/2 cups. First, beat 1 ( 8 ounce ) package of cream cheese with 1/2 a stick of softened butter until the consistency is creamy. Next add 1/2 a teaspoon of vanilla extract. Then, slowly mix in 1 cup of confectioners' sugar. That's all for the frosting. As a finishing touch, I added some blueberries for an extra burst of flavor. That's it! So easy and were just what I needed this afternoon!
These lemon cupcakes were so tasty and fun to make! Here's how I made them:

Chocolate Chip Banana Bread is one of my favorite foods! So I decided to try these recipe I saw on culinaryarts.about.com It's amazing!! I got the recipe for these delicious cookies from www.foodandwine.com! The original recipe was for Chocolate Espresso Snowballs, but I didn't have espresso powder, so instead I just used cocoa powder. I also left out the pecans. Go check out the recipe for these fantastic cookies at www.foodandwine.com/recipes/chocolate-espresso-snowballs Enjoy! I got this idea from Woman's Day Magazine. And let me tell you, it is the best chicken I've ever had! Here are the instructions: 1. In a small bowl combine: 2 tbsp chopped Parsley, 1/2cup chopped sweet green peas, 1/4cup cottage cheese, 1 finely chopped scallion, 1/4 tsp fresh lemon juice, and 1/4 tsp each salt and pepper. 2. Cut a two inch pocket in the thickest part of the chicken breast. Stuff a quarter of pea mixture in each breast. Season chicken with 1/2 tsp salt and pepper. 3. Heat oil in a large skillet over medium-high heat. Cook chicken breasts until golden brown and cooked through, 5-7 minutes per side. I hope you enjoy and try it yourself! It was absolutely delicious! I got this splendid recipe from ifeellikecooking.com and tweaked it a bit. Instead of Penne pasta I used Rotelle, I didn't use coriander powder, and instead of vodka sauce I used regular pasta sauce and added a touch of cream. I hope you try it out! It's absolutely delicious! Of course, my thanks go to www.ifeellikecooking.com/featured-recipe-blog.html I have to say, Russian Tea Cakes are my new favorite cookies! They are so delicious! I've made them three times in the last week... This time I got the recipe from: www.allrecipes.com/recipe/Russian-tea-cakes-i/ Though instead of walnuts and I used pecans, made them small, and cooked them 10minutes instead of 12minutes. I would recommend using the recipe in the link above, enjoy! |
