These lemon cupcakes were so tasty and fun to make! Here's how I made them:
For the cupcake itself you can use your favorite recipe-- I used some good old box mix, which for the record, is just as yummy as anybody else's recipe. The frosting however, I made from scratch and is fairly simple. I needed very little frosting, so this recipe makes approximately 1 1/2 cups. First, beat 1 ( 8 ounce ) package of cream cheese with 1/2 a stick of softened butter until the consistency is creamy. Next add 1/2 a teaspoon of vanilla extract. Then, slowly mix in 1 cup of confectioners' sugar. That's all for the frosting. As a finishing touch, I added some blueberries for an extra burst of flavor. That's it! So easy and were just what I needed this afternoon!
